  • 300 gm butter, melted and cooled
  • 4 eggs
  • 300 gm self-raising flour

For the Flavoured Syrup

  • 1 tbsp dried lavender flowers
  • 300 gm golden caster sugar

For the Buttercream Icing

  • 400 gm butter, softened
  • 3 food colourings gels
  • 550 gm icing sugar

For the Butterfly Wings

  • 400 gm white chocolate
  • 2 chocolate biscuits, crushed
  • 3 food colourings gels

Recipe / Instructions

  • Heat the oven to 180 degrees C and line two 12 moulds cupcake baking containers with paper muffin cases. Put all the cake ingredients in a big bowl and beat with an electric blender for three to four minutes or until pale and light. Equally divide the blend among the 24 cases and bake for 20 minutes or until a toothpick inserted in the centre comes out clean or with a couple of crumbs. Now let them cool on a wire rack.
  • While the cupcakes are in the oven, make the syrup. Put the lavender, sugar, and 300 ml water in a medium container over a low warmth. Bring the bowl to boil, cook for two minutes, remove from the heat and leave it. Once cold, strain through a sifter into a little container.
  • To make the icing, put the icing sugar, butter, and 100 ml of the syrup in a big bowl. Blend in with a wooden spoon, and then with an electric whisk and beat until smooth and cushioned. Equally distribute the blend in three containers. Include a dot of food colouring gel to each bowl to make three unique shades of buttercream and mix to blend, and then move half of each shading to funneling bags.
  • Utilize a cocktail stick to jab a couple of little holes on the top of the cupcakes, and shower each with 1 tsp of the syrup. Put 1 stacked tsp of icing onto each cupcake (do eight of each colour) and whirl it round with the rear of the spoon to totally cover the top. Next, utilize the funneling bag to pipe a straight line around 2-3 cm long over the centre of each cake.
  • To make the wings, melt the white chocolate in a heatproof container over a skillet of stewing water. Equally distribute into three small containers and include the same gel colours you used before. Cut 8 cm squares of parchment paper, and utilizing a pen, draw a couple of butterfly wings on each square so the design is visible on the other side. Turn the paper over and, utilizing the line as a guide, paint on the softened chocolate. Sprinkle crushed biscuits like Oreos on the edges to make designs and let it settle. When set, delicately place the wings into the cupcakes at a 45 degrees angle.
